What is the concha and what was its use?

The basin is a circular, low and wide container, made of wood (larch or fir) or copper that was used to skim milk using the skimming technique. The raw milk was poured into it and left to rest in a cool place away from the light for the time necessary for the fat (cream) to rise to the surface.
