What is feathering and what is it for?
Plumage is the term used to indicate the layer of white mold that develops on the external surface of some cured meats during the fermentation and curing process. This mold plays an important role in the preservation process of raw cured meats because it creates a barrier that helps protect the product from excessive contamination, while also promoting a controlled and optimal environment for maturation.
